How to Make Grits Bread
1 cup cold, leftover grits, bacon fat (or butter), and salt...

...and buttermilk (or whole milk).

All purpose or bread flour...

...and instant yeast.

Mix with your dough hook. Add in sorghum syrup or honey.

Knead and knead on medium speed...

...until the dough comes together and eventually clears the bottom of the bowl.

Dough will be smooth and stretchy.

Form into a ball and let rise overnight in the fridge.

You can also skip the overnight rise and just let it rise until doubled, about 2 hours or so.
Press out all the gases.

Plop out onto the counter.

Pat into a rectangle, and then roll up into a log.

Pan, cover, and let rise until 1 inch over the top of the pan.

Bake! Makes amazing burger buns, too!
