Soak 200g flat rice noodles in hot water for 10 minutes.

Add a splash of oil and 3 cloves garlic to a wok.

500g chunks of mushrooms, cook until they release water.

Then add two chopped carrots...

And 150g broccoli

Pour in 850ml veggie stock or vegan chicken stock

2 tbsp yellow bean paste or miso paste

1.5 tbsp light soy sauce

0.25 tsp white pepper

Pour in 4 tbsp cornflour mixed with 1/4 cup water. Simmer for 10 mins until it thickens up...

Add in 150g cabbage or pak choi (any leafy green will work)

Pop the cooked, rinsed and drained noodles in the wok, stir well and serve!
