Wash and dry peppers. Place on a lightly greased baking sheet.

Bake peppers at 450 degrees until soft and browned, about 15 minutes. Rotate halfway through.

Remove from baking sheet and place in a bowl.

Immediately cover with plastic wrap and leave to steam for 30 minutes.

After steaming, remove plastic wrap and let cool until ready to handle. Then, peel skins.

And remove stems and seeds.

Store in a plastic or glass container with leftover juices. Add a little vinegar and olive oil.

This is NOT a shelf stable recipe. It must be stored in the refrigerator for 5-10 days.
