How To Make Savoury Rice Porridge (Thai Jok)
Pour 3 litres of veggie stock into a large stock pot and bring to the boil.

Once boiling add 2 cups of rice, stir and cover. Bring to the boil and then simmer for 90 minutes.

Keep it simmering away until the rice starts to break down, stir regularly.

Set aside and then reheat when needed, the rice will last 5 days in the fridge. So make it in bulk!

Add more water until it's a soupy consistency.

Add in a handful of spring greens or cabbage.

Serve into bowls...

And add grated carrot, garlicky mushrooms, fresh sticks of ginger and soy sauce (to taste).
