How To Make Smashed Potatoes
Wash baby potatoes.

Dry well with paper towel or clean dish towel.

Whisk together olive oil and seasonings.

Add dry baby potatoes to bowl and toss in olive oil mixture until coated.

Place on baking sheet and bake at 400 degrees for 20-25 minutes or until easy to pierce with fork.

Once potatoes are easy to pierce with a fork, remove from oven and smash potatoes with a heavy glass or other flat surface.

Sprinkle with grated or shredded parmesan cheese and return to the oven for 10 more minutes.

Remove from oven once cheese is melted and serve.
