Tofu skin, also known as pressed beancurd or yuba skin, normally comes in folded sheets.
Start the tofu skin salad by slicing the pressed beancurd skin into thin strips.
Peel and cut the cucumbers in quarters and then slice on the diagonal into small pieces.
Cut cauliflower into small florets to yield 2 cups. Finely chop spring onions into small rounds.
Mix soy, black vinegar, sesame oil and water in a bowl. Add brown sugar and stir until dissolved.
Add grated ginger, crushed garlic and hot chilli oil. Stir dressing until combined.
Mix all tofu skin salad ingredients together and dress well with Chilli Black Vinegar Dressing.
