How To Make Thai Coconut Curried Soup (Khao Soi)
Place all of the curry paste (full recipe on our website) into a pan with a splash of oil, fry off.

Add in 400g chunks of tofu

Pour in 400ml coconut milk and stir well

Then pour in 750ml veggie stock

2 tbsp vegan fish sauce (or soy sauce)

Pop in 600g chunks of baked sweet potatoes

Wilt down 100g spring greens, roughly chopped
