It’s easier than you think

Place flour, sugar, salt and yeast in a mixing bowl and combine

In a small jug, whisk together eggs and water

Add this to the flour mixture and combine

Mix until the flour is incorporated

Place bowl on mixer with a dough hook and mix on medium-high, slowly adding soft butter

Butter should be quite soft

Mix for 20 minutes, then place dough into an oiled bowl, cover with wrap and refrigerate overnight

The next morning, knock down dough and roll on a floured surface, to get a 35 x 40cm rectangle

Spread with cooled melted butter and sprinkle on combined cinnamon and brown sugar

Gently roll dough, easing in the edges as you roll

Divide into 9 slices, using a serrated knife and cutting in one direction. Place into lined pan

Cover with a damp tea towel and place in oven (on defrost) to prove for 90 minutes

Rolls will double in size

Make the glaze by combining icing sugar, cream cheese, butter, vanilla paste and milk

Bake rolls for 25 minutes, then spread on the glaze while they’re still warm
