How To Make The Perfect Prime Rib
Remove the leaves of the 7 sprigs of rosemary.

Remove thyme leaves from 4 sprigs of thyme.

Roughly chop the herbs.

Place a rack in a baking dish.

24 hours before: Pat the prime rib dry completely with a paper towel.

Sprinkle with herbs, salt, pepper and garlic salt. Flip the prime rib over.

Season the other side with herbs, salt, pepper and garlic salt. Repeat with the sides as well.

Make sure the prime rib is fully seasoned. Refrigerate for at least 8 hours or up to 48 hours.

Remove from fridge for 1 hour. Top with butter. And cook according to the prime rib cooking sheet.

Check internal temperature. Remove from the oven and cover with foil to let rest.

Just before you are ready to serve turn oven to broil and broil for 7-10 minutes to caramelize.

Slice and serve with horseradish sauce or Au jus.
