How To Make Turkey Stock
Break down your cooked turkey carcass and put it in a large stock pot.

Add the onion, carrot, celery, shallot, mushroom stems, and herbs to the pot.

Don’t forget to add the salt!

Pour enough water into the pot to cover all the ingredients (20-24 cups).

Place a lid on the pot & bring to a boil. Then turn heat to low & simmer for 3.5-4 hours.

Remove the large pieces of bones and veggies from the stock - you can toss these.

Strain the stock with a fine mesh strainer to get any remaining bits out.

Pour the stock into a storage container, (like a mason jar), straining once more if desired.
