Cook 400g pasta for 10 mins, in boiling water. Drain and set aside.

Sauté 1 chopped onion until translucent

Add 4 cloves crushed garlic

Pop in 500g chestnut mushrooms, stir well for 5 mins until they release water

Chuck in 2 tbsp mixed Italian herbs...

And 1 tbsp oregano

Pour in 250ml oat cream (or other plant cream)

Season with salt & black pepper

Put the pasta in, mix well and serve with vegan parmesan and garlic bread!
