How To Make Vegan Fish Pie
Boil 1kg potatoes for 10-15 mins, then drain and mash with 4tbsp vegan butter & 4tbsp oat milk.

Preheat oven to gas mark 5. Mash 2 tins of butter beans by hand.

Melt 1 tbsp vegan butter.

Fry off 2 chopped onions until translucent, then add 3 cloves crushed garlic.

Add in leaks, cook until softened and then stir in 1 tbsp each of fresh dill and parsley.

Pour in 250ml oat cream and splash of white wine (or water).

Stir through 1 sheet of nori (ripped into shreds), 3 tbsp nutritional yeast & 2 tsp chopped capers.

Add mashed butter beans.

Add 1 cup peas

Season with salt and black pepper - to taste.

Top with creamy mashed potatoes and bake for 20-30 minutes.

Top with vegan cheese 10 minutes before the end (optional).
