How To Make Vegan Ham (seitan)
First make your beet purée by adding 1 (15-Oz) can beets WITH the water to a food processor. Fill the can to the brim with water and pour that in too.

Blend until completely smooth. This will add that pink ham-like color to our seitan!

Next, make your seitan by whisking together the dry ingredients (vital wheat gluten, flour, salt, pepper, onion powder, smoked paprika).

Make a well in the center and pour in the wet ingredients (beet purée, maple syrup, pineapple juice, liquid smoke, refined coconut oil)

Mix with a rubber spatula or wooden spoon until a dough ball forms.

Then, get your hands in there and knead for no longer than 60 seconds to activate the gluten.

Form the seitan into a loaf and wrap it in tin foil.

Steam it for 45 minutes.

Carefully remove the seitan from your steamer and place it in a square baking dish. Open the top a bit for steam to escape and bake at 325F for 20 min

Mix the glaze ingredients (refined coconut oil, beet purée, 🍍 juice, coconut sugar) over low heat until all the sugar is dissolved.

Unwrap the seitan and pour 1/2 the glaze on top. Bake another 30 minutes.

When time’s up, remove the roast from the oven and pour on the remaining glaze.

Let it cool 10 minutes before slicing and serving at your holiday brunch or dinner!
