How To Make Vegan Papaya Salad (Som Tam)
Grate 400g carrots (3-4 carrots)

Prepare 300g green papaya / cabbage, chop tomato & green beans. Can't find papaya? Use cabbage.

In a pestle and mortar add 2 green chillies

Pop in 2 cloves garlic

Add 1 tbsp brown sugar (or coconut sugar)

Pound all ingredients in a pestle & mortar

Add tomatoes and smash some more

Now add the green beans and bash even more

Scrape the contents of the mortar into a big bowl with the papaya (or cabbage) and carrot.

Pour in 2 tbsp fresh lime juice.

Pour in 2 tbsp vegan fish sauce (or soy / tamari)

Pop in 100g peanuts

Stir well until all ingredients are combined. Enjoy!
