Boil 500g chopped potatoes for 10 minutes, then drain.

Meanwhile, heat 2 tbsps of oil and add 2 tsp each of cumin seeds and yellow mustard seeds.

Pop in one chopped onion and sauté for 10 mins.

Add in 3 cloves crushed garlic and 1 inch piece of ginger (chopped finely).

Pop in 1/2 tsp chilli powder, one tsp ground coriander and one tbsp tomato puree

Pour in 2 tbsp water

Chuck in the potatoes and 1/2 cup of water, stir well and cook for 5 minutes.

Add 1 tsp salt.

Wilt in 250g spinach, 2 handfuls at a time.

Stir well and serve!
