Add a stick of lemongrass and kaffir lime leaf, and 3 tbsp of coconut milk. Stir well.
Pour in remaining coconut milk.
Add Thai eggplants
Add pressed tofu
Pop in the rest of the veggies, 2 tbsp light & dark soy sauce and 1 tsp coconut / brown sugar.
