Start with a defrosted chicken on a cutting board. Remove the innards (usually in a bag).
Next locate the backbone. Use meat shears & cut to one side of the backbone, from tail to tip.
Do the same on the other side of the backbone.
Remove the backbone and set the meat shears aside.
Turn the chicken over. Spread the breasts & press until they lay flatter (some bones should break).
That’s it! You can cook this chicken in the oven, or follow my Smoked Chicken recipe!
