Huckleberry Glazed Elk Meatballs
In large bowl add ground elk, minced garlic & onion, oregano, salt and pepper.
Add one egg (optional) and mix together.
Form mixture into meatballs and let chill for 30 min. Then bake at 375 for 6-8 min.
Meanwhile add 1/4 cup bbq sauce and 3 tbsp huckleberry syrup, jam or jelly to skillet on low heat.
Add splash of bourbon and bring sauce to a boil then return to simmer.
Take your meatballs out of the oven, add your glaze and broil on low for 3 minutes.
