India: Aloo Masala
Steam potatoes until fork tender but slightly undercooked.

Peel and dice potatoes.

In a pan over medium-high heat, fry cumin, mustard seeds, chana dal and urad dal for a minute.

Then add sliced onion, curry leaves and chopped green chili, and fry for a couple minutes.

Add asefoetida, and ginger. Then fry until onion is golden brown.

Add potatoes, turmeric, salt and water, then stir, and cook for a few minutes.

Add cilantro, then cover and turn off the heat.

Use aloo masala to make masala dosa or serve on its own.
