Add shredded chicken, tomato sauce, corn and chipotle peppers to bowl and mix well.

Divide chicken mixture amongst your ramekins.

In a separate bowl mix masa harina, baking powder and salt, then stir.

Add peppers, chicken stock and lard, then mix. Form into rounds, and top the chicken mixture.

Cover ramekins with foil.

Bake for 15 minutes at 375 degrees. Remove foil and bake another 15 minutes at 425 degrees.

Let cool 5-10 minutes, then serve.
