Begin by evenly slicing 1 English cucumber. I use a mandolin to get perfect slices. If you don’t own a mandolin, simply slice into 1/4” rounds.

Put the cucumber slices in a jar with a lid. Tuck them down and in as far as they will fit without breaking.

In a small bowl, whisk 3 tablespoons sugar to 6 tablespoons vinegar to 9 tablespoons water. Whisk to FULLY dissolve the sugar. Pour over cucumbers.

Place the lid on the jar and gently rock to allow any trapped air bubbles to escape. Leave on the counter and stir after about an hour.

After stirring, pop into the fridge overnight. Stir before serving. I enjoy these on my barbecue pulled pork sammies!
