Instant Pot Bacon & Gouda Mac ‘n Cheese
Cook bacon in IP on “sauté” until crisp. Remove from the pot. Add butter and cook onions until soft.
Stir in pasta (I use “medium shells”, water, and kosher salt.
Seal the lid and cook on high pressure for 4 minutes. When finished, quick release pressure.
Stir in mustard powder, onion powder, paprika, pepper, cream cheese, and heavy cream until creamy.
Add in shredded smoked Gouda and sharp cheddar about a cup at a time. Stir to melt.
Keep stirring until a creamy sauce forms. Add reserved cooked bacon and season to taste.
Serve immediately with your favorite Mac ‘n Cheese topping (see the blog for ideas!)
