Instant Pot Broccoli Cheddar Soup
On sauté mode, heat butter. Add in chopped onion, and fresh garlic. Cook until soft, about 3-4 minutes

To the pot, add in chicken broth, broccoli, and diced carrots. Cover the instant pot and set to “sealing”

Cook on manual high pressure for 1 minute

When the time is up, do an instant steam release

In a separate small bowl, whisk some of the soup with corn starch

Stir the corn starch mixture back into the soup. Turn on to sauté mode and cook while stirring constantly until thickened

Turn the instant pot off and stir in sharp cheddar cheese a little at a time until melted

Stir in whipping cream and season to taste with salt
