Instant Pot Caramelized Carrot Soup
Peel and cut the carrots, removing the inner core

Set the Instant Pot to saute mode, melt butter, add carrots, baking soda, salt and water.

Seal the lid and set to high pressure for 20 minutes.

Do a quick pressure release, then add the broth to the pot

Blend with an Immersion Blender until really smooth (about 3 mins)

Heat on saute mode for 3 mins. Turn off. Add final butter and puree again.
