Instant Pot Corned Beef & Cabbage Dinner πŸ€πŸ»
Place onions and garlic in the bottom of your instant pot. Add the corned beef brisket on top. Add seasonings, vinegar, water and beer.
Cover and set your instant pot to pressure cook high for 1 hour 25 minutes.
Meanwhile, prepare your fried cabbage: Remove core in the middle and cut into 1” pieces. Place into a large bowl.
Rinse with cold water. Shake to drain excess while leaving some water on the leaves.
Heat oil in large frying pan over high heat. Add sliced cabbage (be careful as it will sizzle because of the water!). Stir and cook 2 minutes.
Add garlic, salt and pepper. Stir. Cover and cook 2-3 minutes until slightly softened.
Remove cover, stir and cook additional 5-8 minutes or until cabbage is slightly browned and caramelized. Set aside.
Once pressure is released carefully remove lid. Remove and reserve about 2 cups of liquid. Flip corned beef over and add potatoes and carrots.
Cover and set to pressure cook high for 5 additional minutes. Use quick release to remove pressure once finished.
Remove lid and place corned beef on serving platter along with veggies. Serve with extra liquid if desired. (Or use for broth in leftover soup πŸ˜‰).
Slice (against the grain) and serve! Make sandwiches or soup with any leftovers (my favorite part πŸ˜‹).
