Instant Pot Cuban Style Ropa Vieja

Reserved Beef Broth, Strained
1 Tbsp
White Vinegar
1 Tbsp, more for optional garnish
Capers, Drained
Add half the onion, half the green bell pepper and 5 chopped garlic cloves to the instant pot.

Add 2 lbs flank steak cut into 2 x 4 inch pieces and 1 Tbsp salt.

Add 2 cups of water.

Close the Instant Pot and set to sealing. Set to high pressure for 40 minutes with natural release.

Remove the beef from the Instant Pot and reserve the broth. Shred the beef with two forks.

Sauté remaining onion, green bell pepper and garlic in olive oil until the onion is translucent.

Add the cumin, oregano, tomato paste, white wine and stir.

Add the shredded beef and 1 cup of the reserved broth and stir.

Cover and simmer for 15 minutes.

You can dance if you want to.

Add salt and pepper to taste. Add white vinegar and capers and stir.

Serve with a side of Cuban white rice. Enjoy!
