Prepare ingredients - dice onion, bacon, carrots, and mince garlic. Cut broccoli into 1/2” pieces.

Set instant pot to sauté more. Add butter and melt.

Add onions and bacon and sauté 4-6 minutes. Stir in garlic and let cook 30 seconds. Turn off IP.

Add broth and 1/2 spices and scrape bottom of pot to deglaze. Make sure there are no stuck on bits!

Add in 1/2 broccoli (set other half aside.)

Add carrots - and set IP to manual high pressure for 1 minute. Seal and let cook.

Perform quick release. Remove lid, set to sauté, stir in rest of spices, broccoli, cheese.

Bring to a boil and stir well, cook for 2-4 minutes. Top with additional cheese and fresh dill.

Serve as a main dish with bread/keto breadsticks or as a hearty side dish for meats!
