Instant Pot Minestrone Soup (Olive Garden Copycat)
Turn the instant pot onto sauté mode. Add 2 teaspoons avocado or olive oil.

Prep all your vegetables. 2 zucchini, 1 head celery, 1 onion, 1 pound carrots.

Add the vegetables to the instant pot and sauté for 5 minutes.

Add 3 cloves minced garlic.

Add 1 can kidney beans (rinsed and drained) and 1 can white beans (rinsed and drained).

Add 3 cartons chicken stock.

Add 2 teaspoons oregano and 2 teaspoons salt.

Then add 1 large can crushed tomatoes.

Cover with the lid and turn the valve to sealing.

Turn on manual high pressure for 5 minutes.

Manually release the pressure by moving the valve to the venting position.

Then turn the pot onto sauté mode again and add the pasta. Cook for 5 minutes.

Add the kale and green beans and cook for 2 minutes.

Serve with grated Parmesan cheese on top.
