Instant Pot Pinto Beans And Cornbread
Rinse the dried beans well, sorting through and picking out any that are misshapen, shriveled, etc.
Next, fry some diced bacon in the insert pot of your Instant Pot, using the Sauté function. Once crispy, remove to a paper towel to drain.
Add diced onions to the bacon grease and cook until softened.
As they release liquid, be sure to deglaze the pot and scrape up any browned bits.
Press Cancel to turn off the Sauté function. Add the dried beans.
Add in the garlic, bacon and a ham hock.
Add in some ham broth (I mix water and ham bouillon).
Add in a little black pepper. Pressure cook for 50 minutes at high pressure, followed by a natural release. Then, add salt to taste.
Be sure to serve these beans the way my West Virginian dad grew up eating them—with cornbread and fried potatoes!
