Instant Pot Pulled Pork

Add brown sugar, smoked paprika, mustard powder, cumin, salt, and pepper to a bowl.

Stir with a fork until homogeneous.

Cut meat into chunks and remove major fat.

Rub the dry rub onto all sides of each piece of meat.

Heat Instant Pot to saute. Once hot, add oil and meat to sear.

Flip to sear each side 2-3 minutes, then remove from the pot.

Add onions and saute 2 minutes. Add garlic and tomato paste, and cook another minute.

Add chicken stock, then turn off your pot. Scrape up the bits to avoid the burn message.

Add the seared meat to your pot with the vinegar and apple cider vinegar.

Pour in any remaining rub.

Close the lid and set the vent to seal.

Set it to cook for 60 minutes, then let NPR at least 10 minutes.

Carefully remove the lid, and pull the pork from the pot to a cutting board.

Shred the pork - I love meat claws for this.

Return to the Instant Pot, add the bbq sauce, and stir.

Serve immediately. It's great on sandwiches, over potatoes, and more.
