Instant Pot Spring Risotto
Turn Instant Pot to Sauté function and add butter. When butter melts, add prosciutto.

Cook prosciutto until it’s nice and crisp. Remove from Instant Pot and set aside.

Cook sliced leeks until softened.

Add plenty of garlic and cook for 30 seconds, stirring constantly.

Add arborio rice and cook until toasted.

Pour in a dry white wine.

Stir until the wine is nearly absorbed.

Pour in warm chicken stock, seal the Instant Pot top and cook on Manual for six minutes. Move the valve for a quick release after cooking.

Stir in provolone and butter until melted.

Stir in fresh basil, chives, mint and lemon juice.

Look at that decadent, creamy goodness!

Top with prosciutto, roasted asparagus and torn mozzarella. Enjoy!
