Instant Pot Stuffed Peppers
Add rice, water, and salt to a pot on the stovetop. Cook until rice is tender

In a large bowl combine rice w/raw ground beef, mozzarella, Parmesan, onion, parsley, & seasonings. Add fire roasted crushed tomatoes and mix together

Cut the tops off the peppers and gently remove the seeds and membranes from inside

Add water to the instant pot and add the trivet. Place the peppers cut side up in the instant pot

Full the peppers to the brim with the meat mixture (they will be really full). Cook on manual high pressure for 9-10 minutes (10 for softer peppers)

Do an instant steam release, then cover the peppers with more mozzarella and Parmesan. Cover for a minute or 2 to melt the cheese

Sprinkle with fresh parsley and DEVOUR!
