Italian Antipasto Salad With Lemon Basil Dressing
Chop the washed romaine lettuce and place in a large salad bowl.

Add 3 cups mixed greens. Toss to combine.

Dice half of an English cucumber.

Slice 1/2 cup jarred red bell pepper.

Roughly chop 1/2 cup jarred marinated artichoke hearts.

Slice 1/4 cup kalamata olives.

Dice 1/2 cup salami into small chunks.

Add the chopped vegetables along with 1/2 cup shredded mozzarella cheese.

Top with 1 cup croutons.

Make dressing by combining 1/4 cup lemon juice, 2 Tbs white balsamic, 1 tsp lemon zest, 1 tsp honey, 1 tbs basil, 1/3 cup olive oil, salt and pepper.

Toss the salad with desired amount of dressing and serve.
