Italian Keto Breakfast Casserole
Preheat your oven to 400 and spray an 8x8 pan with cooking spray

In a medium pan on medium heat, cook Italian sausage until golden brown. Once cooked, drain off the excess fat

Spread cooked sausage onto the bottom of the prepared pan

Whisk 4 egg whites, two eggs, reduced sodium vegetable broth, Parmesan cheese, pesto, roasted red pepper, salt, and pepper together in a large bowl

Pour egg mixture over the sausage

Bake until the eggs puff up and feel set, about 30-35 minutes

Garnish with pine nuts and basil and DEVOUR!
