Italian Minestrone Soup with Pesto
Sauté the veggies - onion, carrots, celery, garlic, sweet potato, yellow potato, cabbage, and zucchini.

Add seasoning and liquids - diced tomatoes, white beans, tomato paste, and broth. Stir well.

Cook until veggies are fork tender. Then add Parmesan rind and bay leaves.

Bring to a rolling simmer and add pasta and basil pesto. Continue cooking.

When veggies and pasta are tender, add spinach. Remove pot from heat.

Serve this delicious soup!
