Heat olive oil on medium/high

Sweet potato (sub with extra carrots or butternut squash or any veggies of choice)

Sauté 5-8 minutes until veggies are tender and start to caramelize

Add herb of choice (I prefer sage or rosemary)

Deglaze with wine (optional)

Kitchen hack - masher to crush the tomatoes

Parmesan Rind (optional) simmer until pasta is cooked al dente
