Beat butter and sugar together in the bowl of a stand mixer.

Beat until well-combined...

Scrape down the sides of the bowl as needed.
Then keep mixing until fluffy.
Add the egg, vanilla extract, and almond extract and mix to incorporate.

In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

Whisk the dry ingredients together.

With the mixer on low speed, gradually add the dry ingredients to the wet ingredients.

Mix just until combined into a soft dough.

Roll out dough between two sheets of parchment paper and chill in the refrigerator for about 30 min.

Cut into desired shapes.

Place on prepared baking sheet and bake at 350F for 8-10 min, just until the edges start to turn golden. Don’t overbake!

Let them cool completely on a cooling rack, then eat plain or frost and decorate as desired!
