Start by sautéing onions and peppers with a pinch of salt and cumin seeds.

Add a can of kidney beans. Plus 2 tsps paprika, 2 tsps ground cumin, 1/2 tsp chilli, 1/2 tsp chipotle paste stir it up.

Add a can of tomatoes to the mix and let it simmer gently. Add a pinch more salt to taste. Next get on with cooking up the jack fruit.

I added two packets of Jacked-Ups Tex Mex and pulled ‘Vegan pork’ Jackfruit to a pan of hot oil.

Cook up the jack fruit for about 15 minutes.

Once the jackfruit is nicely charred and your beans and veg are cooked, time to assemble the Jacked-up burritos.

Add a dollop of guacamole, vegan cheese, jackfruit, beans and veg, then pico de Gallo and finish with some chipotle Mayo and habaneros.
