Jamaican Banana Pancakes
Gather all of the ingredients

Peel ripe bananas and mash them up with a fork

Add cinnamon, nutmeg, and vanilla and stir
Transfer into a larger bowl, add eggs and incorporate

Add the milk and stir to combine

Lastly, in flour and stir just until moist - do not over stir

Spray a large pan or skillet liberally with oil and turn the stove on to medium heat

Scoop out pancake batter - about 1/4 cup per pancake

Wait until small bubbles form then flip pancakes!

Cook for about 2 minutes per side or until lightly brown on the edges and centers

Stack them up on a plate, your favorite topping, and enjoy!
