Jamaican Sweet Sour Chicken
Cut 500gm boneless chicken into cubes

Whisk an egg, with 1tbsp oil

Add 1tsp red chilli powder, salt and pepper to taste

Add 1tsp ginger garlic paste, 1tbsp soya sauce

Add 2 tbsp cornflour and whisk until combined

Add chicken in the egg mixture and marinate for 30mins in fridge

Take 1cup of ketchup, add 2tbsp of chilli sauce with 1/4tsp ground pepper

Add 1/2tsp chilli flakes and 1 cup water. Set aside

Add 1/4cup oil to a pan on medium heat and add marinated chicken

Cook until the chicken is half tender

Add a chopped onion and a chopped capsicum

Add freshly sliced scallion and 1/2 cup cashews

Next add the prepared sauce to the chicken

Cook for 5 min and let it simmer

Now add a small can of pineapple cubes and cook. If the curry is thick,add the pineapple syrup also

Cover the lid and let it cook for 5 minutes
