Jameson’s Chocolate Mousse for St. Patrick’s Day
Separate 2 eggs.

Add dark chocolate, butter, and espresso powder to a bowl over simmering water....

....and melt.

Cook eggs, sugar and Jameson’s over LOW heat...

...til you can do this.

Add cooled chocolate to egg yolks.

Whip egg whites.

Fold a small amount into chocolate.

Fold in the rest.

Add a little Bailey’s to heavy cream and whip.
