Preheat oven to 450°F & pat dry with paper towels. Generously season your roast with sea salt and black pepper.
Place roast fat-side up on a pan with a roasting rack. Add to oven & cook for 15 mins at 450°F. Reduce the temp to 325°F & cook for 1 hour & 40 mins.
Once time is up, move beef to a cutting board & tent it with foil loosely. Allow it to rest for 15 mins under the foil.
After resting, carve the beef against the grain for best results. Serve, and enjoy!
