Karhai Chicken (boneless Karahi)
Chop one pound of boneless chicken into bite sized pieces

Add 1/3 cup of yogurt

1/2 tsp cayenne, 1/2 tsp salt, 1 tsp ginger garlic paste

Mix and marinate for 20-30 minutes

Take 1 tsp each coriander and cumin and dry roast till darker and aromatic

Place chicken mix in a hot pan, add ground spices, 1/2 tsp cayenne, 1/2 tsp salt

Also add 1/4 cup Passata or 3 puréed tomatos

Cook on medium heat till it dries and the spice paste starts to stick to the bottom

Add 3 tbsp of oil

Add a teaspoon Kasuri methi and 1/2 tsp coarse black pepper

Garnish with green chilies, cilantro and julienned ginger
