Keto Chicken Tortilla Soup
What you'll need

Low Carb Tortilla
1 teaspoon
Olive Oil (for tortilla)
1/4 teaspoon
Salt (for tortilla)

Onion (small, fine, dice)
4 cloves
Garlic (minced)
1 teaspoon
Chili Powder
1 teaspoon
Ground Cumin
1/2 teaspoon
Smoked Paprika
4 cups
Chicken Stock
14.5 oz can
Fire Roasted Tomatoes
4 oz can
Diced Green Chiles
1 pound
Chicken (cooked, shredded)
To taste
Salt
To taste
Pepper

Sour Cream

Fresh Cilantro

Lime Wedges

Avocado

Prepare your ingredients before you begin. Preheat oven to 350F.

Brush both sides of tortillas with oil. Cut into strips, spread onto baking sheet & season with salt & pepper.

Heat oil in a pot over medium heat. Add onion & garlic. Cook 2-3 minutes to soften.

Stir in chili powder, cumin & smoked paprika. Cook 1-2 minutes, stirring often.

Bake 5-7 minutes, tossing 1-2 times.

Pour in the diced tomatoes, green chiles and chicken stock, then add the chicken. Bring to boil, then simmer 7-10 minutes. Season with salt & pepper.
