Keto Chocolate Mousse
What you'll need
4 ounces, softened
Cream Cheese
2/3 cup
Heavy Cream
1 1/2 teaspoons
Vanilla Extract
1/3 cup
Swerve Confectioners Sugar
1/2 cup
Sugar-free Chocolate Chips
1 pinch
Place 1/2 cup choc chips in large heatproof bowl. Heat 2/3 cup heavy cream in saucepan over med heat. When bubbles form in center, remove from heat.
Pour over choc chips & let stand 2-3 mins. Slowly stir until melted & smooth.
Add 2 oz softened cream cheese to large bowl & beat until incorporated. Add rest of 1/2 & 1/2 & beat again until mixed.
On low, add 1/3 cup powdered Swerve, 1 1/2 tsp vanilla, & 1 pinch of salt to melted chocolate. Beat on low speed until mixed well. Add cream cheese.
Increase speed & beat until light & fluffy, about 1 to 2 minutes.
