Keto Eggs Benedict on Cauliflower Toast
What you'll need
5 cups
Cauliflower Rice
4 ounces
Cheddar Cheese (shredded)
1/2 teaspoon
Salt
1/4 teaspoon
Pepper
1/2 teaspoon
Garlic Powder
1/4 teaspoon
Paprika

Egg (for toasts)

Egg Yolks
1 tablespoon
Lemon Juice
1/4 teaspoon
Salt (for Hollandaise)
1/2 cup
Unsalted Butter
8 ounces
Cooked Ham (or Canadian Bacon)

Eggs
1 tablespoon
Distilled Vinegar
Place cauliflower in microwave-safe bowl. Cover w/ plastic wrap & 1 side open to vent. Cook 6 min.

Let cool. Squeeze out as much water as you can. Mix w/ cheese, salt, pepper, garlic, paprika & egg.

Form into 8 patties and place on a baking sheet.

Bake at 400F for 15 minutes, flip, and bake another 5 minutes.

Melt butter until foamy. Add egg yolks, lemon & salt to a blender on high. Drizzle in butter slowly.

Turn off blender and transfer to a bowl.

Poach eggs in simmering water with vinegar. Turn off heat and let sit 4-5 min. Remove and assemble.
