Prepare your ingredients before you begin.

Combine flour, monk fruit & butter until moist. Press into a 8” pan. Bake at 350F for 12-15 min.

Whisk the eggs in a med bowl, then add lemon juice, zest, erythritol, monk fruit & gelatin to blend.

Pour onto the crust and bake another 22-25 minutes. Cool then place in refrigerator for 1 hour.

Cut into 9 squares and enjoy!
