Prepare your ingredients before you begin.
Mix together the tomato, jalapeños, and lime juice in a small bowl and set aside.
Cook cauliflower rice and 1 tablespoon olive oil in a skillet over medium-high heat, stirring often, until tender, about 5-7 minutes.
Add ground beef, chili powder, cumin, oregano, salt and pepper to a large skillet. Cook on medium heat for 10 minutes or browned through.
Whisk together the mayonnaise and lime juice and drizzle just before serving.
