Prepare your ingredients before you begin.
Mix together the tomato, jalapeños, and lime juice in a small bowl and set aside.
Cook cauliflower rice and 1 tablespoon olive oil in a skillet over medium-high heat, stirring often, until tender, about 5-7 minutes.
Add ground beef, chili powder, cumin, oregano, salt and pepper to a large skillet. Cook on medium heat for 10 minutes or browned through.
Whisk together the mayonnaise and lime juice and drizzle just before serving.
Serve cauliflower rice topped with beef, salsa, queso fresco and sauce. Full recipe with more detailed instructions is linked below!
