Season beef w/ salt & pepper. Add to large skillet on med-high heat. Cook 5-7 min & no longer pink.
Add the ground beef and cauliflower rice to a large casserole dish.
Return pan to stove and add oil and peppers. Cook 2-3 minutes until starting to soften and blister.
Add peppers and pepper jack cheese to the casserole dish. Stir to combine.
Top with the cheddar cheese.
Bake at 350F for 20 minutes or until the cheese is melted and the casserole is hot and bubbly.
Garnish with cilantro and serve with sour cream, if desired.
What you'll need
1 large head, riced
Extra Virgin Olive Oil
1, finely diced
1 1/2 cups
1 1/2 cups, shredded
Pepper Jack Cheese
1 cup, shredded
Sharp Cheddar Cheese
