Keto Shrimp and Grits

Prepare the ingredients for the grits.

Use a blender to rice the cauliflower super fine.

Add cauliflower, salt, pepper, heavy cream, and butter to a large saucepan over med-high.

Cook until tender (10 min), then remove from heat and stir in the cheese. Keep warm.

Prepare ingredients for the shrimp while the grits are cooking.

Toss shrimp with Cajun seasoning and set aside.

Add bacon to a large skillet over med heat. Cook until crisp (10 min), remove with a slotted spoon.

Drain all but 1T grease from the skillet. Add shrimp. Cook 1-2 min per side or until opaque.

During the last minute of cooking, add the bacon back to the skillet and toss to combine.

Serve grits topped with shrimp and a squeeze of lemon, if desired.
